The Best Potato Salad

Ranch dressing and pepperoncini peppers give this potato salad it's distinct flavor.
Prep Time: 20 Minutes
Cook Time: 20 Minutes Ready In: 3 Hours 40 Minutes
Servings: 12



Ingredients:
6 eggs
10 red potatoes
1 cup mayonnaise
1/2 cup ranch dressing
1/3 cup dill pickle relish
2 tablespoons prepared yellow mustard
1 1/2 teaspoons salt 1/4 teaspoon ground black pepper
1/8 teaspoon paprika
1/8 teaspoon celery seed
1 onion, chopped
1/4 cup pepperoncini (optional)
1/4 cup sliced black olives (optional)
Directions:
1. Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water; cool the eggs under cold running water in the sink. Peel and chop the cooled eggs.

2. Place the potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, 15 to 20 minutes. Drain and refrigerate until cold. Peel and cube once cold.

3. Stir together the mayonnaise, ranch dressing, relish, mustard, salt, pepper, paprika, and celery seed in a mixing bowl. Add the eggs, potatoes, onion, pepperoncini, and olives; stir until evenly mixed. Cover and refrigerate at least 2 hours before serving.

To help families stay connected, below is a list of helpful family time tips. Keep in mind, quantity and quality time is important when choosing activities. 1. Eat together & listen to each other

Most children today don't know the meaning of a family dinnertime. Yet the communication and unity built during this set-ting is integral to a healthy family life. Sharing a meal together allows the opportunity to talk about each other's lives. This is a time for parents to listen, as well as to give advice and encouragement. Attentive listening conveys a message that a person is really interested in another. It also imparts a sense of worth and helps develop trust. Therefore, listening is a critical link in successful parenting.
2. Read often

It's important for parents to read to their children. The latest research indicates that reading to your children cultivates an interest for knowledge and stimulates language development. It also increases their attention spans and helps them become more curious. Look for books that your child would enjoy reading. After reading, ask questions about the content.
3. Do chores together

Part of what goes on in the home is the development of teamwork. Functional family life depends on the contribution of everyone. Assigning chores is the most productive way of teaching responsibility and accountability to your children. Doing chores with your child will help foster good communication skills.
4. Help with schoolwork

A great way to spend quality time with children and light a fire of learning is to help children with their schoolwork. Regular trips to the library for school projects are an inexpensive and enjoyable way to spend time with children. The newest members of the Colburn clan



Yesterday Madison and I put together our first fish tank. Complete with red rocks, pseudo grass and a really cool pirate ship! So far we have five vibrantly colored Neon Guppies and two water frogs.  When Jackson gets back this weekend he's going to pick out some stuff for the tank too. The lady at the pet store said we could even put a small shark in there-- how cool is that-- to have a pet shark!!

Note to Self: No potty breaks for Mommy during paint time!!
